paella

Ingredients (serves 4 people)

  • 2 boneless chicken thighs (skin-on)

  • 2 links of spanish chorizo (usually found in the charcuterie section)

  • 4-6 ounces of prosciutto (pre-packaged and sliced)

  • 2 spanish onions

  • 1/2 lb of shrimp

  • 1/4 lb of mussels (typically 8-10)

  • 1 red pepper

  • 1 can of diced tomatoes

  • 6 cloves of garlic

  • 1 bag of frozen peas

  • 2 lemons

  • 1 1/2 cups of aborio rice

  • 1/2 gallon of chicken stock

  • 1 tsp saffron threads

  • sweet smoked paprika

  • olive oil

  • water

  • parsley
